Obituary for J. Peter Clark

John Peter Clark III of Oak Park, IL died on June 4th, 2015. J. Peter Clark was born in Philadelphia, PA, the eldest of seven siblings. He graduated from La Salle College High School in 1960 and the University of Notre Dame, with a B.S. in Chemical Engineering, in 1964. He earned his Ph.D. in Chemical Engineering from the University of California at Berkeley in 1968. He married Nancy, shortly after. After graduation he worked for the USDA in Albany, CA, and Washington, DC. He joined the faculty at Virginia Tech in 1972 and taught for six years then went to work for ITT Continental Baking Company as Director of Research. In 1982 he moved to Oak Park, IL and started a long career in consulting. Peter authored eight books and more than 40 papers, and he served as a contributing editor and columnist for Food Technology magazine. In 2011 he received the Life Achievement Award from the International Association for Engineering and Food; he was also a fellow of the American Institute of Chemical Engineering and the Institute of Food Technology. Peter was president of the board and a volunteer at the Oak Park River Forest Food Pantry. He was also an active member of the St. Giles Family Mass Community. He and Nancy were long-time benefactors of the WFMT Folkstage program and enthusiastic supporters of the folk music community. They regularly hosted traveling musicians in their home in Oak Park. He is survived by his spouse Nancy Clark; his son Shannon John (Usha Mishra) and daughter Hannah (Peter Meehan); his grandchildren Hazel, Avi, and Joan; his siblings Mary Elizabeth Clark, S.S.J., Mark, Teresa (John) Trudeau, Louis (Anne), Jimmy Clark (Angela Klaerner), and Victoria Clark (Jeffrey) Kauffman; and many nephews and nieces. Family and friends will meet for a memorial mass at 10:30a.m. at St. Giles Church (1045 Columbian Avenue, Oak Park) on Saturday, June 13. Interment is private. In lieu of flowers, donations to the Oak Park River Forest Food Pantry ( are requested.
